炭火で温める真鍮製の鍋が特徴的。スープは昆布や干しエビなどで取った透明で非常にあっさりした「清湯」 が基本です。主役は上質な羊肉の薄切り。臭みが少なく甘みのある羊肉の素材そのものの味を楽しむため、薬味は練りごまダレ(芝麻醤) が定番です。日本のしゃぶしゃぶに近い、上品で滋味深いスタイルです。
•    四川・重慶火鍋(マーラー火鍋):
